Demonstration Dinner by Chef Joanie Moore 11/6/2023

We were just as excited as the guests to welcome Chef Joanie back from Colorado with a full house. Chef Joanie demonstrated how to prepare easy and very tasty appetizers which are perfect for the holiday season. As usual, our thoughtful Chef had a surprise on the table for the guests to nibble with their special beverages. Since she has been our Chef for the past 4 years, she kept in mind for her menu the need to offer some vegetarian alternatives for her fans.

Each course described all the practical techniques to make simple appetizers much more interesting. The recipes were incredibly detailed and Chef Joanie with her positive energy managed to keep their attention all evening by responding very clearly to all their questions.

As you can see, she put together an intricate menu:

Guests were greeted with table nibbles, marinated olives, seasoned cracker bits, and candied smoked pecans.

First course plate included a samples of beetroot cucumber and apple on a crispbread, coriander citrus shrimp, and sweet potato chorizo balls with pepper jam.

Second course samples were oriental spiced carrots, crab with chili and lime fillo tartlets, Asian style turkey meatballs, and bacon crack.

The third course, she demonstrated the proper way to caramelize onions and talked in depth about how to cook and roll tenderloin. It also consisted of portabello-cheese tartlets, Boursin and strawberry with crostini.

Fourth course was the star of the night, dessert. Everyone focused on her while she showed the process of making “toffee bark,” apple pie bars, ginger cookies, and peppermint bark.
